Veggie Nachos

Ingredients 

  • 1tbsp olive oil 
  • 1 medium brown onion 
  • 1 clove garlic 
  • 1 can chopped tomatoes 
  • 1 can pinto beans 
  • Bag of corn chips 
  • 1 ½ cups of grated cheddar cheese 
  • ½ cup sour cream 
  • ¼ cup sweet chili 
  • Guacamole {if wanted} 
  • 1/3 cup chopped red onion 
  • Salt and pepper 

Method 

  1. Preheat oven to 200 degrees   
  2. Put oil in frying pan cook and sweat onion and garlic for 5 mins or until onion softens. Stir in undrained tomatoes and beans. 
  3. Spread corn chips over a baking dish, sprinkle cheese overtops and bake for fifteen mins until cheese is melted. 
  4. Bring mixture to a boil, reduce heat, simmer, stir constantly until mixture thickens slightly. Season with salt and pepper. 
  5. Serve nachos topped with sweet chili, red onion, sour cream and guacamole if wanted.
