Mac and Cheese with Side Salad & Garlic Bread

Ingredients: 

340g of elbow pasta 

60g of butter 

¼ cup onion, finely diced 

¼ cup of flour 

cups of milk 

2 cups of cheddar cheese, grated  

Salt and pepper  

2 cups of broccoli  

¼ cup of breadcrumbs  

Side salad ingredients: 

Broccolini & kale salad: 

250g broccolini 

2 cups baby kale, finely sliced 

½ red onion, finely diced 

½ dried cranberries 

½ toasted almonds 

¼ coriander, finely diced  

3T lemon juice 

Garlic bread ingredients: 

1 long bread stick loaf 

To make the garlic butter: 

128g of softened butter 

2 garlic cloves 

3T parlsey, finely diced 

3t lemon juice (fresh squeezed is best) 

Method: for mac and cheese 

Preheat oven to 200C bake 

1- Gather all ingredients 

2- finely dice onion and broccoli  

3- cook pasta 

4- make a roux, by melting butter into a separate pot, add flour and mix. Cook at low heat, add milk and keep mixing. Add salt and pepper to taste. 

5- drain pasta and put pasta back in the pot, add the broccoli, onion and the roux into the pot and mix all together, until nicely mixed 

6- put into an oven bowl 

7- sprinkle cheese over the top to cover the mac and cheese, then cover the cheese in breadcrumbs, this is to melt and add flavour. Add salt and pepper for taste if needed. 

8- Bake in the oven for about 10 minutes till cheese on top is melted 

9- change oven setting to grill and grill for 10 minutes to try crisp 

10- serve hot on own plate with salad at the side. 

Method: for side salad 

1- Gather all ingredients 

2- chop the broccolini into thin slices 

3- dice kale, red onion, cranberries and coriander finely  

4- mix into a bowl together 

5- squeeze lemon juice into the bowl and stir though again 

6- Serve on same plate as the mac and cheese on the side 

Method: for garlic bread 

Preheat oven to 200c on bake 

1- Gather all ingredients 

2- crush garlic cloves 

3- finely dice the parsley 

4- soften butter in microwave 

5- add all ingredients together into the bowl with softened butter 

6- mix together 

7- cut the bread stick loaf into slices almost to the bottom (keep the bread together but cut enough to get garlic butter into the bread)  

8- butter the slices of bread with the garlic butter 

9- cook in the oven to crisp bread and melt butter, bake for 5-6 minutes, take out and check, continue to bake for another 4-5 minutes to crisp 

10- serve hot and on own side plate next to the mac and cheese/side salad.
